Mei ble uteksaminert med Bachelor of International Hotel & Tourism Management med Honours Class I ved University of Queensland (UQ), Australia i 2005. Etter å ha jobbet noen år i hotellbransjen i Norge, returnerte hun til UQ for å fortsette med doktorgradsutdanning som omhandler norsk reiseliv og reiselivsinnovasjon på nasjonalt nivå. Dette ble fullført i 2012. Ved siden av å ha jobbet som lærer/veileder og forskningsassistent ved UQ, parallelt med doktorgradsstudiet, har hun også erfaring med å drive restaurant i Norge.

Hun har publisert flere vitenskapelige fagfellevurderte artikler i internasjonalt anerkjente tidsskrifter i tillegg til bokkapitler, konferansepapirer og forskningsrapporter. Videre er hun reviewer for mange anerkjente vitenskapelige tidsskrifter. Mei har lang erfaring innen undervisning og forskning i fagområder som reiselivsledelse, reiselivsutdanning, matturisme og matruter, innovasjon, regional utvikling, samskaping og brukermedvirkning, forbrukeratferd, markedsføring, merkevarebygging, serviceledelse og læringsprosesser i høyere utdanning.
